Perennial vegetables are becoming increasingly important as key players to address nutrient deficiencies, and topsoil and ecological stability.
Many people know of perennial vegetables such as asparagus, artichoke, and rhubarb, but there are hundreds of other edible plants (including trees with edible leaves!) that are extremely useful in increasing variety in the human diet and supporting health, as well as reducing the need to disrupt topsoil and the biology therein.
